rustica’s chef, thomas litrenta. originally from oak harbor and a graduate of oak harbor high school, chef thomas has worked in restaurants for the last 25 years in the general area of seattle.
thomas’ love of food came from his italian-american upbringing. from an early age he remembers the love that his bisnonna (great grandmother) put into cooking, especially the sauce for sunday dinner. his family knew dinner time was coming together to share stories, laugh, and enjoy good wine. the lesson learned while spending time with his family: nobody leaves hungry!
thomas believes in using small organic local farms and in working with them to better understand their product. he understands the most flavorful cuisine is made simply with the highest quality ingredients. he considers it part of his calling to inspire and educate guests about the surrounding bounty of the pacific northwest.
